2016 Food & Wine Classic in Aspen

July 11, 2016

Back in June, an assignment lead me to the 2016 Food & Wine Classic in Aspen to photograph for Club Monaco, one of the sponsors of the event. Aside from being a well known clothing brand, Club Monaco is also a lifestyle brand, hosting many food and other cultural events at their various locations (especially at their Fifth Avenue location in NYC). Club Monaco's most recent location opened in Aspen, just in time for the 2016 Food & Wine Classic festivities.

This was my first time attending the Food & Wine Classic and also my first time visiting Aspen. Aspen truly held up to its reputation: plenty of sunshine, clear air, very happy and courteous locals and breathtaking landscapes; the perfect setting to enjoy this year's Food & Wine Classic.

A quaint and walkable city full of unique details, Aspen has plenty of options for eating, coffee, shopping and sight seeing. I started most of my days with a cortado at Victoria's Espresso. Additionally, Meat and Cheese is a cute option for a morning cup. They also make almond milk in house, which was a delicious alternative to dairy.

Aside from coffee, I did most of my food and drink consumption at the Food & Wine Classic events and Grand Tasting. In addition to trying all of the dishes from this year's participants, it was also a pleasure to roam the Grand Tasting and speak with the chefs at each station. Some of my favorites from the Grand Tasting were Ahi Tuna Sashimi from Cooper's Hawk Winery & Restaurant, and pretty much everything that was served by Chef Anthony Cole of Chatham Bars Inn & Resort

Whether it was the Spicy Tuna Tartare Summer Roll (pictured above), Porchetta Sandwich, Creme Fraiche Panna Cotta, Short Rib Slider, or the Chilled Cucumber Soup with Trout Roe, everything that Chef Anthony Cole served up was consistently delicious. Needless to say, I frequented his booth daily at the Grand Tasting!

Another one of my favorite dishes at the Grand Tasting was a Ricotta Tartine, with Sautéed Shallot, Tiny Tomatoes, Almonds, Kale and Basil by Chef Hugh Acheson. For all of the Hugh Acheson fans out there, it appears that he is opening a new cafe in the upcoming Club Monaco store in Charleston. How exciting! Hopefully this delicious Tartine will be on the menu!

  1. The snacks here had a smooth taste with a bit of cheese and lime juice. To start, we got pork rinds at San Francisco event venues; they were really flavorful with a spicy kick and smooth taste. Plus, it was a large fresh bag too, place is worth the price.
